I think she got it from a food program on KSL years ago &#8211; but its hard to remember. Anyway, its a great way to use some of those fresh vegetables from your garden. (Not my garden, I don&#8217;t currently have a garden)&#8230;<\/p>\n<p>Anyway, think Banana bread meets Zucchini bread. &#8230;meets carrots&#8230; meets pumpkin pie spice&#8230; its pretty good!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" style=\"border: 2px solid black;\" src=\"https:\/\/spoon.ernstrom.net\/wp-content\/uploads\/Breads\/EarthBread.png\" alt=\"Earth Bread\" width=\"320\" height=\"470\" align=\"middle\" \/><\/p>\n<blockquote><p><strong>Earth Bread<\/strong><\/p>\n<div>3 cups flour<\/div>\n<div>1\/4 tsp cinnamon<\/div>\n<div>1\/2 tsp pumpkin pie spice<\/div>\n<div>1 tsp baking soda<\/div>\n<div>1\/2 tsp baking powder<\/div>\n<div>1 tsp salt<\/div>\n<div>1 1\/2 cups sugar<\/div>\n<div>\n<div>3 eggs<\/div>\n<div>3\/4 cup oil<\/div>\n<div>1\/4 cup water<\/div>\n<div>2 tsp vanilla<\/div>\n<div>\n<div>1 cup mashed banana<\/div>\n<div>1\/2 cup grated carrots<\/div>\n<div>1 cup grated zucchini<\/div>\n<div>1\/2 cup chopped nuts<\/div>\n<div>.<\/div>\n<div>\n<div>\n<div>\n<div>In medium size bowl mix together well the dry ingredients.<\/div>\n<div>\n<div>In large bowl mix together well the eggs, oil, water, and vanilla.<\/div>\n<div>.<\/div>\n<div>\n<div>\n<div>Stir dry ingredients into wet ingredients.<\/div>\n<div>\n<div>Add in banana, carrots, zucchini, and nuts.  Mix only until it&#8217;s thoroughly mixed<\/div>\n<div>.<\/div>\n<div>\n<div>\n<div>\n<div>Pour into pans of choice that have been greased and floured.  Bake at 350 degrees.  Takes 30-60 minutes to bake depending on pan size\/selection.<\/div>\n<div>\n<div>Cool 10 minutes on wire rack before removing from pan.<\/div>\n<div>\n<div>*Slices better after additional cooling and when sliced thick.<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/blockquote>\n<p>Since I didn&#8217;t have a garden this year, I used zucchini from my mom&#8217;s&#8230; and carrots from a neighbor&#8217;s garden. Thanks guys! I left the nuts out this time since I didn&#8217;t have any on hand, but I have to say that I MUCH PREFER it with nuts. It just adds another dimension to the bread.
